A comforting Wonton Noodle Soup recipe featuring homemade wontons filled with ground pork and shrimp, served in a flavorful chicken stock broth with egg noodles and bok choy.
Wontons:
1. In a bowl combine all wonton ingredients (ground pork, shrimp, green onion, grated garlic, grated ginger, Shaoxing wine, soy sauce, oyster sauce, sesame oil, salt, white pepper, MSG, egg, cornstarch). Mix in one direction until you see streaks on the side of the bowl.
2. Make wontons by placing 1 tsp of filling in the center of a wrapper. Using water to bind, fold the wonton in half to make a triangle, then bring each end together and pinch.
Soup:
1. Combine chicken stock, water, scallions, ginger, garlic, and shiitake mushrooms in a pot.
2. Let simmer for 30 minutes, then remove the aromatics. Slice the shiitake mushrooms for serving.
3. Season the broth with fish sauce, salt (to taste), white pepper, MSG, and sugar.
4. Boil bok choy for 2 minutes, then blanch in cold water.
5. Boil thin egg noodles according to package directions.
6. Boil wontons for 5-6 minutes.
7. Assemble your bowl with noodles, bok choy, wontons, and soup, then enjoy!
