A flavorful and spicy seafood boil featuring shrimp, sausage, corn, and potatoes, all coated in a rich Cajun butter sauce with a homemade spice mix and Tabasco.
Spice Mix: In a bowl combine 1 tbsp chili powder, 1 tbsp cayenne, 1 tbsp Cajun seasoning, 1 tbsp Old Bay, 1 tbsp lemon pepper, 1 tbsp smoked paprika, 1.5 tbsp sugar, and salt to taste.
Cajun Sauce: In a pan, melt 2 sticks of unsalted butter until foaming and sauté 10-12 minced garlic cloves until translucent and fragrant. Add half of the prepared spice mix and 3 tbsp Tabasco Cayenne Sauce, then let simmer for 5 minutes. Keep warm.
Seafood Boil: In a large pot, bring water to a boil and add the rest of the spice mix, 2 lemons, 1 onion, 1 head of garlic, 5 bay leaves, and 1/4 cup Tabasco Cayenne Garlic Sauce. Bring back to a boil, then cook 4 red potatoes for 15 minutes. Add 1 package of sliced andouille sausage and 2 ears of corn and boil for 5 minutes. Add 2 lbs shrimp and cook for a final 5 minutes. Simultaneously, in a separate pot of boiling water, boil 4 eggs for 8 minutes, then place them in ice water and peel their shells. Strain out the shrimp, sausage, corn, and potatoes from the boil. Combine the strained seafood and vegetables with the warm Cajun sauce and the boiled eggs.
