A classic Hawaiian snack or meal combining seasoned sushi rice, crispy pan-fried spam, savory egg sheets, and furikake, all wrapped in toasted nori seaweed. This recipe yields 24 musubis, perfect for sharing or meal prepping.
1. Wash rice with cold water and drain. Repeat process until water runs clear then add water and cook in rice cooker.
2. Crack and whisk eggs making sure to season with salt and pepper.
3. Melt 1 tbsp of butter in a nonstick pan on medium heat and once it starts to foam add a ladle of the eggs mixture. Cover with a lid and wait for the eggs to solidify (2-3 minutes). Cut egg sheets into rectangles that will fit into a musubi maker.
4. Combine mirin, soy sauce, sugar, and kombu in a pot and heat for 20 minutes on low heat.
5. Cut spam into 8 equal slices and pan fry on medium heat until lightly browned on both sides. Pour in a few tbsp of the sauce and flip until each side is caramelized.
6. Using a musubi maker, place a sheet of nori at the bottom and the mold on top. Add rice at the bottom and evenly flatten it out. Sprinkle furikake on top of the rice then add the egg and spam. Wrap the musubi in the nori and enjoy.
