A classic smash burger recipe featuring thinly sliced onions cooked with the patty, American cheese, and a homemade secret sauce, all served on brioche buns with pickles.
1. Thinly slice onion using a mandolin or a knife.
2. Form ground beef into 4oz balls.
3. Combine burger sauce ingredients.
4. Heat cast iron/stainless steel pan on medium high heat for 2-3 minutes. It’s hot when water beads up.
5. Place balls on pan and season with salt and pepper.
6. Add a small handful of onions on top and smash down as hard as you can to make a thin patty.
7. Cook for two minutes, scrape and flip over.
8. Add cheese and buns(top bun first then bottom bun).
9. Once the cheese is melted(1-2 minutes), assemble burger with pickles and sauce.
