A quick and easy Taiwanese dish featuring smooth silken tofu topped with a savory sauce, century egg, and fresh garnishes like pork floss, scallions, cilantro, and bonito flakes.
1. Combine soy paste, 3 tbsp water, grated garlic, dark soy sauce, and sesame oil to make the sauce.
2. If you cannot find soy paste, make it at home: Heat 1/2 cup light soy sauce and 1/4 cup sugar on medium-low heat until the sugar is dissolved. Once dissolved, add a mixture of 3 tbsp cornstarch and 1/4 cup water and stir until thickened (about 30 seconds). Let cool to room temperature.
3. Drain the silken tofu on a paper towel, peel the century egg, and prep all desired garnishes (pork floss, scallions, cilantro, bonito flakes).
4. Plate the drained tofu with the prepared sauce, century egg, pork floss, scallions, cilantro, and bonito flakes.
