Loco Moco, a classic Hawaiian comfort food featuring savory beef patties, rich gravy, and a fried egg served over a bed of white rice, garnished with green onions.
Patties:
1. In a bowl combine the ground beef, minced onion, grated garlic, 1 tbsp Worcestershire sauce, and 2 tbsp soy sauce.
2. Form the mixture into 4 large patties.
3. Season patties generously with salt and pepper.
4. Heat oil on medium-high heat in a pan and sear patties for 3 to 4 minutes on each side until browned.
Gravy:
1. In a separate bowl, combine beef stock, 1 tsp Worcestershire sauce, 4 tsp soy sauce, ketchup, and cornstarch, whisking until smooth.
2. In the same pan that you cooked your patties, melt the butter and sauté the sliced onions and shiitake mushrooms for 8 minutes, until browned and caramelized.
3. Once browned and caramelized, add the prepared gravy mixture to the pan and simmer, stirring occasionally, until the gravy thickens.
4. Season the gravy with salt and pepper to taste.
