A quick and flavorful pasta dish featuring crispy bacon, aromatic garlic and onion, savory kimchi, and a creamy gochujang sauce, tossed with spaghetti and finished with parmesan cheese and green onion.
1. In a dry pan, render bacon on medium heat until the fat has rendered and it becomes nice and golden brown.
2. Add chopped onions and sauté for 3 minutes until translucent before adding minced garlic.
3. Once the garlic is fragrant (30 seconds), add the chopped kimchi along with kimchi juice. Sauté for an additional 5-7 minutes.
4. Pour in heavy cream and simmer until it is slightly thickened (4-5 minutes). Season with black pepper then turn the heat to low and keep warm.
5. Boil spaghetti in salted boiling water until al dente (8-9 minutes).
6. Add pasta to the sauce along with 1/4 cup pasta water and mix vigorously on medium low heat.
7. Once the sauce starts to cling to the pasta, add grated parmesan cheese and mix again.
8. Plate with more parm and garnish with green onion.
