1. Cut beef into cubes and marinate with Shaoxing wine, 1 tsp soy sauce, 1/4 tsp salt, 1 tbsp cornstarch, and 1 tbsp neutral oil. 2. Prepare vegetables by chopping bell peppers and onions into petals and finely mincing ginger and garlic. 3. Combine sauce ingredients (1/2 cup beef stock, 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp ketchup, 1 tsp sugar, 1/4 tsp MSG, 2 tbsp black pepper, 1/2 tsp Sichuan peppercorn powder, 1/2 tsp white pepper, 2 tsp cornstarch) in a bowl. 4. Heat 2 tbsp of neutral oil in a hot wok and sear beef for 3-4 minutes, ensuring a nice crust. 5. Remove beef and add more oil to the wok. Sauté the garlic, ginger, and vegetables until slightly translucent (about 2 minutes) then add back the beef and the sauce. 6. Once thickened, finish with sesame oil and enjoy.
